Broiled Hake with Rosemary Mini Potato Medley

2 pieces of Hake (1/3 lb each)
1/2 lb – mixture of mini potatoes
1 medium shallot – sliced into rings
5-10 grape tomatoes
A few sprigs of rosemary
Olive oil
Salt and pepper to taste
Lemon wedges

You can find this potato mixture at local farmers’ markets. I think they work well with the fish (but also enjoy just roasting them and eating as a side dish.)

The mild flavor of the fish works perfectly with the rosemary and shallot infused potato and tomato mixture.

Preparation Time–10 minutes
Cooking Time–30 minutes

Preheat oven to 425 F degrees
In a glass baking dish, place potatoes, tomatoes, shallots, sprigs of rosemary, a drizzle of olive oil and salt and pepper to taste
Bake for 20-30 minutes or until potatoes are fork tender

Lightly coat with olive oil and add salt and pepper to taste
Turn broiler onto hi
Place fish on pan under broiler for about 3-4 minutes per side or until meat is opaque and flaky

Remove fish once done take off baking pan.

To serve:
Place potato, tomato and shallot mixture onto middle of plate. Place piece of fish on top of mixture. Garnish with a sprig of rosemary and wedge of lemon.

Serve immediately.
