Lamb Rib Chops with Rainbow Swiss Chard

4 lamb rib chops
4 cups chopped rainbow swiss chard
1.5 tablespoons diced shallots
1 clove diced garlic
Pinch of red pepper flakes (optional)
1 tablespoon unsalted butter (optional)
Olive oil
Salt and pepper to taste

The mild lamb pairs nicely with the slight bitterness of the swiss chard (and the colors really make this dish pop.) This is a great meal for a special occasion.

I like this dish because it is an example of a few ingredients being simply prepared that combine into a great meal.

Preparation Time–10 minutes
Cooking Time–8-10 minutes

Swiss Chard
Heat about a teaspoon of olive oil in a sautee pan over medium-low heat
Add diced shallots and cook for 2-3 minutes
Add diced garlic (and small pinch of chili flakes if desired) and cook one additional minute
Add chopped swiss chard and cook for 8-10 minutes. A tablespoon of butter can be added if desired. If mixture seems a little dry add one teaspoon of water.

Lamb Chops
Set broiler to high
Brush a little olive oil onto both sides of lamb
Salt and pepper both sides to taste
Broil on pan for 3-4 minutes on each side for medium (2-3 for rare)

Remove and allow to rest for 2 minutes

To serve:
Spoon swiss chard mixture onto center of place and cross two lamb chops per plate.
